We pick grapes lately that are allowed to continue to ripen on the vine to intensify the flavour and sugar. Late harvest grapes are often more similar to raisins, but have been naturally dehydrated while on the vine.
The wine was fermented at cool temperatures in stainless steel. When the sugar/alcohol/acid/flavour balance was deemed correct by the winemaker the fermentation was stopped with natural residual sugar present. The result is a wine that is bright, fresh and full flavoured.
Every year we complete many exacting tasks because it is the last step in creating this, one of the world truly great winery. Our team makes wine for our many customers who own and manage their own brands. The wines we create are of all types-red and white still, and red and white sparkling with all of the major varieties used in South Australia.
